CHEF LOUIE BOSSI
Louie Bossi isn’t just a chef — he’s a craftsman of Italian tradition, a believer in second chances, and a pillar of his community.
Born into a spirited Italian household in New York, Louie grew up surrounded by the aromas of roasted garlic, fresh basil, and his family’s Sunday sauce simmering on the stove. Raised by a single mother working three jobs, he learned early that perseverance is the key ingredient to any recipe for success.
At just eight years old, Louie began teaching himself to cook. By his teens, he was working in a local pizzeria, scrubbing dishes before earning his place behind the oven. The rhythm of the kitchen became his home — and the fire of a pizza oven, his first teacher.
In 2000, Louie brought that passion to Florida, joining Big Time Restaurant Group as a grill cook. His relentless drive and hands-on leadership soon earned him the role of Executive Chef at Big City Tavern. Along the way, Louie became certified in the ancient art of charcuterie under Chef Brian Polcyn and achieved the distinction of Master Pizza Maker from the Scuola Italiana Pizzaioli in San Francisco.
But Louie’s greatest transformation didn’t happen in a kitchen — it happened in his life. After confronting addiction and embracing sobriety, he made it his mission to give back. In 2017, he founded Taste of Recovery, an annual culinary event in partnership with The Crossroads Club in Delray Beach. The event gathers Florida’s top chefs to celebrate hope, community, and the healing power of good food, with all proceeds supporting recovery programs that change lives.
Today, Chef Louie Bossi leads with both heart and heritage — a living example that grit, gratitude, and great food can restore more than just the soul. With every meal, he honors where he came from and who he’s become, proof that the best dishes, like the best lives, are made with love, patience, and a little bit of fire

Lisabet Summa joined Big Time Restaurant Group in 1997 as the restaurant group executive chef and partner. Since then she has opened over a dozen restaurants.
Growing up in Lake Forest, Illinois her inspiration for pursuing a career in the culinary arts began. Summa largely views herself as a cook, an armchair traveler,
and an artisan.
She began working at a 5 star mobile-rated restaurant called St. Honore and also studied pastry and chocolate making in Montreal at the renowned Patisserie De Gascoigne. Later Summa become the Chef at Café L’Europe, one of the most highly acclaimed restaurants in Palm Beach, and Pastry Chef at La Vielle Maison in Boca.
The cooking knowledge that Summa employs on a daily basis comes from her experience in various positions in the kitchen. Summa spends a lot of time simplifying what she intends for a menu, and getting back to the elements that truly make a dish a success. Summa’s motto is flavor, seasoning, product quality and technique.
